It may take a little practice to master, but the art  of making it can be rewarding. Learn some basic tips and yours will turn  out great. These tips can help you overcome any obstacles to making  wining creations at home.&lt;br /&gt;&lt;br /&gt;The very best ones are made with homemade stock. Any ingredients you use  should be as fresh as possible. While this does add to the total  cooking time, you cannot beat the flavor. If time is short, you can use  canned broth or soups like tomato or creamed verities that come in cans  to make your base. Frozen vegetables can also be used if needed.&lt;br /&gt;&lt;br /&gt;To lower the amount of fat that you eat, you have two methods to choose  from. You can use paper towels without any printing on them to soak up  fat from the top, or you can chill your creation overnight. This lets  the fat solidify on the top. All you need to do is skim it off and  reheat the mixture. Savory verities always taste better the next day  anyway.&lt;br /&gt;&lt;br /&gt;When you taste your soup, you may feel it is too salty. This happens  from time to time to everyone. Add a peeled potato to your soup. After  fifteen minutes, remove it. The potato will soak up any excess salt. It  tastes pretty good later, too, as it has soaked up some of the flavor of  the mixture. When adding herbs, remember that herbs added towards the  end of cooking will have a stronger impact than herbs added early. If  you are using wine to add flavor, do not use as much salt. Wine will  intensify the flavor of the salt.&lt;br /&gt;&lt;br /&gt;Everyone loves noodle soups. For the best results, cook your pasta  separately. This keeps the pasta from adding starch to your soup. Pasta  will be the last ingredient you add. Other ingredients to add near the  end of your cooking time include fast cooking vegetables like corn,  leafy vegetables, and frozen peas.&lt;br /&gt;&lt;br /&gt;Make your &lt;a href="http://www.pumpkinsoup.org/" target="_blank"&gt;soup&lt;/a&gt;  from ingredients you have on hand. You can make this  one either savory or sweet... both versions taste great.&lt;br /&gt;&lt;br /&gt;If you like creamed soups but need to watch your calories, you can  substitute your heavy cream with a combination of a quart of cold water,  two cups of powdered milk and a half can of evaporated milk. Do not  boil creamed soups. They are much easier to make if you have a double  boiler.&lt;br /&gt;&lt;br /&gt;Leftovers can be refrigerated, frozen in jars, freezer bags or in  plastic containers. You can preserve it in serving size quantities so it  is easy to heat up one or two servings as needed for a quick lunch. These days, everything you  ever wanted to know about being a chef is just a click away. To be  honest, I think the new generation of gourmet chefs aren't as good as we  were because of this. You new guys have too much information, and  you're always looking for the golden egg. Here are some questions I hear  every single week:&lt;br /&gt;&lt;br /&gt;"-Where should I shop for chef clothes? -what is the best book about chef gear?&lt;br /&gt;&lt;br /&gt;-how can i prevent making mistakes while I'm trying to cook with both hands?&lt;br /&gt;&lt;br /&gt;and the list goes on and on."&lt;br /&gt;&lt;br /&gt;any egg splitter worth his salt will tell you that mastering being top  chef is all about being first to the finish line but it is not about  being first out of the gate. you must know how to crawl before you walk,  and you have to know how to walk before you can run. most people who  try to salt the eggplant Parmesan with my eyes closed fail their first  time, and so did i. my friends who got me into it in the first place  wished they never had because i was constantly asking for advice.&lt;br /&gt;&lt;br /&gt;i was absolutely amazed as i watched my excessive steamed shrimp cooking  time reduced to nothing. my self-awareness peaked and i really saw the  light. sometimes i am asked if you need to have a special gift to  prepare delicious dishes or if you can just pick up a book and learn  about cooking tricks. i always say that knowledge is only 22% of the  uphill battle. the other 78 is just hard work on the part of the client.  they really have to give it their all. the world's best culinary artist  is not the guy or girl who never makes mistakes. they probably repeated  your mistakes more often than you have but the difference is that if  they over salt the eggplant or even discover feces in the food you cook  they learn. There are apple fritters and raspberry dough nuts and lots of other  luscious fried foods for you to snack on. If you like something a little  sinful to eat during this delightful celebration you might like to try  blintzes in your favorite flavor. There are many to pick from and their  recipes can be found easily online.&lt;br /&gt;&lt;br /&gt;If you would like to include something a little healthier in your  cuisine, then you might like to include an Israeli salad, stewed white  beans, and baked aubergines and peppers. These meals provide the  opportunity to have something that is not either fried or sweet to  assist weight watchers, who always have a problem during festive seasons  no matter which religion they observe.&lt;br /&gt;&lt;br /&gt;Other Hanukkah favorites include scrumptious dishes such as cheese gelt  coins, loukoumades, vegetable kugel, and brisket. Once again the recipes  for these dishes are very extensively accessible online and in books on  Jewish cooking and traditions.&lt;br /&gt;&lt;br /&gt;To make things go a little more efficiently cook as much food as  possible well in advance and store items away quickly in order to stop  them going stale. Enlist the assistance of children and other family  members when needed to move things along by taking turns preparing food.&lt;br /&gt;&lt;br /&gt;You should also make an effort to keep the preparations as  straightforward as possible to avoid delays and stress. This is a time  of the year that is meant to be committed to celebration not to trying  to cook tons of food. There are a  lot of appetizers that you could start with, but the easiest and most  common has to be the soup. There are just an endless variety of  different soups that can be made.&lt;br /&gt;&lt;br /&gt;Why not try something a little different when it comes to making soup as your appetizer?&lt;br /&gt;&lt;br /&gt;First up, why not take your Butternut squash soup and add a little Apple  flavor to it. No more traditional Butternut squash taste, you now get a  distinctive healthy, fruity taste to your soup.&lt;br /&gt;&lt;br /&gt;Cream of Broccoli soup has long been a favorite of mine, and I would  imagine many others too, but if you were to add some croutons and melted  cheese into the pot, just think of the different tastes that would then  be found. The creamy soup and croutons with a gorgeous melted cheese  influence, totally inspiring!&lt;br /&gt;&lt;br /&gt;Potato soup with a difference is nice. The difference is that you could  use a potato nugget in your soup to give it a crispy feel. Add a little  seasoning of your choice to a Golden brown Potato nugget and really  taste the difference.&lt;br /&gt;&lt;br /&gt;Everybody likes to try pumpkin soup, but again why not tweak it a little  bit by making bisque; or how about a gazpacho for a change?&lt;br /&gt;&lt;br /&gt;If you have a little time on your hands why not try putting some turkey  dumplings in with your Cream of Turkey soup? Well established, properly forged knives that cost a little more money are built to last, and as such the blade is of very high quality. The gradual change from winter to summer means that people are transcend from the heavier to lighter dishes. On some cool, dark evenings, you may still enjoy the heartiness of the heavier recipes, but this is a time when the lighter, brighter dishes start to appear as well.&lt;br /&gt;&lt;br /&gt;Even the name of pasta primavera loosely refers to spring. But some claim it isn't really Italian, since it was introduced to American society by Le Cirque restaurant in New York. Yet according to Foodreference.com, the chef there received it from the painter and writer of Italian cookbooks, Edward Giobbi. So it may be one of the genuine Italian pasta recipes after all. This spaghetti dish uses the first tomatoes of spring, with fresh basil, parsley and garlic, and extra virgin olive oil, making it a lovely lighter dish for the emerging springtime.&lt;br /&gt;&lt;br /&gt;Another of the Italian pasta recipes that will work well in spring is pasta pomodoro. The flavor of this dish resides primarily in the pomodoro sauce itself, which begins with the typically Italian combination of tomatoes, garlic and olive oil. You can use some creativity to personalize the dish, adding ingredients such as mushrooms, peppers or sauteed onions. Or you can add some chopped chicken, as the flavors complement each other very well.&lt;br /&gt;&lt;br /&gt;Italian pasta salads also become prominent as spring progresses, and they too can be light or a little heavier. Many recipes call for little more than perhaps some olives, fresh tomatoes and chunks of feta cheese with basil, while others are more elaborate. They can please the most voracious meat-eater, and yet vegetarians who continue to eat cheese can make just a few alterations and enjoy their own versions of the same recipes. Many of the recipes, especially the spring salads, are quick and easy to prepare. Yet someone who wants to take the time to make a rich meat sauce can turn their pasta meal into a hearty main course. The best temperature to conserve  your food is between 34 to 40 degrees.&lt;br /&gt;&lt;br /&gt;It is equally as important for safety reasons that foods such as  leftovers are refrigerated as soon as possible. You should never reheat  foods that were left out for extended periods of time thinking that  cooking will destroy the bacteria, if you did, well you thought wrong,  the bacteria can actually grow to dangerous numbers and can produce  toxins that are resistant to heat, not even boiling will kill this type.&lt;br /&gt;&lt;br /&gt;Here are some tips for keeping foods fresh:&lt;br /&gt;&lt;br /&gt;- If you store foods, then keep them away from hot areas. If possible,  keep them in cold and dark place where the temperature is about 50-70  degrees.&lt;br /&gt;&lt;br /&gt;- Try to keep the food in your pantry within a reachable height so they are constantly in site.&lt;br /&gt;&lt;br /&gt;- You should khow what food do well when frozen: meats, poultry, soups, berries and berries.&lt;br /&gt;&lt;br /&gt;- And these are the some of the foods that are not good as frozen: vegetables, dairy products and eggs&lt;br /&gt;&lt;br /&gt;- Cut leftovers into small portions before freezing, they will freeze much quicker, and thaw more easily&lt;br /&gt;&lt;br /&gt;- Also, you should always put a date on the foods you freeze so that  when you go to pick them up again, you know if they were frozen for long  or not.&lt;br /&gt;&lt;br /&gt;- Some refrigerators allow you to see the temperature. If that is your  case, then make sure that the temperature inside the refrigerator is  always around zero degrees. A piece of boiled beef pounded to a pulp, with a bit of butter and flour, and rubbed through a sieve, and gradually incorporated with the soup, will be found an excellent addition.&lt;br /&gt;&lt;br /&gt;When the soup appears to be  too thin  or  too weak , the cover of the boiler should be taken off, and the contents allowed to boil till some of the watery parts have evaporated; or some of the thickening materials, above mentioned, should be added.&lt;br /&gt;&lt;br /&gt;When soups and gravies are kept from day to day in hot weather, they should be warmed up every day, and put into fresh scalded pans or tureens, and placed in a cool cellar. In temperate weather, every other day may be sufficient.&lt;br /&gt;&lt;br /&gt;Various herbs and vegetables are required for the purpose of making soups and gravies. Of these the principal are, Scotch barley, pearl barley, wheat flour, oatmeal, bread-raspings, peas, beans, rice, vermicelli, macaroni, isinglass, potato-mucilage, mushroom or mushroom ketchup, champignons, parsnips, carrots, beetroot, turnips, garlic, shallots and onions.&lt;br /&gt;&lt;br /&gt;Sliced onions, fried with butter and flour till they are browned, and then rubbed through a sieve, are excellent to heighten the color and flavor of brown soups and sauces, and form the basis of many of the fine relishes furnished by the cook.&lt;br /&gt;&lt;br /&gt;The older and drier the onion, the stronger will be its flavour. Leeks, cucumber, or burnet vinegar; celery or celery-seed pounded. The latter, though equally strong, does not impart the delicate sweetness of the fresh vegetable; and when used as a substitute, its flavor should be corrected by the addition of a bit of sugar.&lt;br /&gt;&lt;br /&gt;Cress-seed, parsley, common thyme, lemon thyme, orange thyme, knotted marjoram, sage, mint, winter savory, and basil. As fresh green basil is seldom to be procured, and its fine flavor is soon lost, the best way of preserving the extract is by pouring wine on the fresh leaves.&lt;br /&gt;&lt;br /&gt;For the seasoning of soups, bay-leaves, tomato, tarragon, chervil, burnet, allspice, cinnamon, ginger, nutmeg, clove, mace, black and white pepper, essence of anchovy, lemon-peel, and juice, and Seville orange-juice, are all taken.&lt;br /&gt;&lt;br /&gt;The latter imparts a finer flavor than the lemon, and the acid is much milder. In&lt;br /&gt;this guide, we’ll identify the characteristics of those&lt;br /&gt;chocolates used in baking.&lt;br /&gt;&lt;br /&gt;Cocoa is the dry chocolate powder derived from chocolate&lt;br /&gt;liquor. It comes in two types: natural and Dutch process.&lt;br /&gt;Dutch processed cocoa is processed with an alkaline. It is&lt;br /&gt;slightly darker, smoother, and more easily dissolved than&lt;br /&gt;natural cocoa. In many recipes, natural cocoa and Dutch&lt;br /&gt;cocoa are not interchangeable. By specification, it must contain 50 to&lt;br /&gt;58 percent cocoa butter though with inferior products,&lt;br /&gt;vegetable oil may he added. Depending on the producer, milk&lt;br /&gt;solids, vanilla, or salt may be added. I have a package in&lt;br /&gt;front of me that contains only chocolate and milk solids.&lt;br /&gt;Unsweetened chocolate has a bitter taste and relies on&lt;br /&gt;sweeteners in the recipe to make it palatable.&lt;br /&gt;&lt;br /&gt;Sweet baking chocolate--bittersweet, semisweet chocolate--&lt;br /&gt;has sugar added. These products must contain 35 to 50%&lt;br /&gt;cocoa butter but may have as little as 15% chocolate&lt;br /&gt;liquor. Because unsweetened chocolate has twice the&lt;br /&gt;chocolate liquor, we prefer to use unsweetened chocolate in&lt;br /&gt;most of our baking.&lt;br /&gt;Bittersweet and semisweet chocolate can be used&lt;br /&gt;interchangeably in recipes though there is a difference in&lt;br /&gt;flavor. Often, bittersweet is a more expensive chocolate&lt;br /&gt;and to many, a better, richer-flavored chocolate.&lt;br /&gt;&lt;br /&gt;Milk chocolate is made with ten percent chocolate liquor.&lt;br /&gt;It contains a minimum of twelve percent milk solids.&lt;br /&gt;Because it has such a low percentage of chocolate liquor,&lt;br /&gt;rarely is it melted and added to batter or dough.&lt;br /&gt;&lt;br /&gt;White chocolate contains no chocolate liquor but is made&lt;br /&gt;with cocoa butter. Historically, the FDA has not regulated&lt;br /&gt;the manufacture of white chocolate so you need to read&lt;br /&gt;labels carefully. If the product was made with vegetable&lt;br /&gt;oil instead of cocoa butter, it will not perform the same&lt;br /&gt;as a product with cocoa butter.&lt;br /&gt;&lt;br /&gt;Chocolate chips are made with chocolate liquor with only&lt;br /&gt;minimal amounts of cocoa butter. Beat in eggs and vanilla until smooth. The dryer your hands, the less likely you will be to slippage.&lt;br /&gt;&lt;br /&gt;The #1 reason Chefs go to the hospital is not burns, it's cuts.&lt;br /&gt;&lt;br /&gt;Why do we get cut more than getting burned? One would think that in a numbers game, the numbers being we handle hot many times more than we handle knives, we would get burned more than getting cut.&lt;br /&gt;&lt;br /&gt;Simple really, we always use a dry towel (&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;hot pads&lt;/span&gt;) to handle hot. Sure, sometimes we get the occasional oven burn on the arm or grease splatter from the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;friers&lt;/span&gt; but it's the cuts that bring us to a &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;screeching&lt;/span&gt; halt.&lt;br /&gt;&lt;br /&gt;There are 2 basic reasons for getting cut, lack of concentration and slipping. There is no solution to lack of concentration other than PAY ATTENTION!&lt;br /&gt;&lt;br /&gt;There is however a solution to slippage. Keep your hands and direct contact surfaces DRY. A wet handle on a knife or cutting board is a recipe for disaster. Wet hands are the start for a slippery situation.&lt;br /&gt;&lt;br /&gt;Keeping a towel on the counter or just nearby is not good enough, you need to keep the towel on you so you can access it at all times, not just when &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;convenient&lt;/span&gt;. If you don't have pockets, tuck it in the front of your pants top so it resembles a short apron. Tuck the short edge in the top of your pants and let it hang down. Easy to get to and long enough so you can lift it up high enough to dry the knife or veggies without being a bother. Second advantage to this method is it will keep your pants free from splash stains!&lt;br /&gt;&lt;br /&gt;However you want to display your towel is up to you, just as long as you use one faithfully. A dry surface and dry hands will prevent the majority of all cuts.&lt;br /&gt;&lt;br /&gt;10 years in the commercial kitchens and zero stitches because I always practice dry handling procedures. I didn't say no cuts, the occasional nick happens. Like the saying goes, those that play with fire will get burned, so to will the knife handler get a few little cuts or nicks, it's inevitable.&lt;br /&gt;&lt;br /&gt;I said no stitches, which in my f&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;ield&lt;/span&gt; is an accomplishment! I have personally seen some major cuts that took many stitches and many months to heal. The worst cuts were those from lack of concentration. The majority were from "the slip".&lt;br /&gt;&lt;br /&gt;So keep a towel in your pocket or tucked into the top of your pants and it can prevent an accident, not only that but during the backyard BBQ it will make you look like you know what you are doing! I have &lt;br /&gt;traveled the country trying crab cakes that were supposed&lt;br /&gt;to &lt;br /&gt;be fantastic by the critics, but none have ever come close &lt;br /&gt;to this one.&lt;br /&gt;&lt;br /&gt;This is a very simple recipe, as some of the best are, and &lt;br /&gt;can be made in a short amount of time. The dressing gains &lt;br /&gt;flavor over time, 3-5 days, and will keep well if &lt;br /&gt;refrigerated.&lt;br /&gt;&lt;br /&gt;Blue crab lump meat is quite pricy and you can get away&lt;br /&gt;with &lt;br /&gt;just claw meat for this recipe if your budget demands.&lt;br /&gt;&lt;br /&gt;I have reduced the recipe to a manageable size, originally &lt;br /&gt;it was for 100, 4 oz. cakes! The restaurant would go&lt;br /&gt;through &lt;br /&gt;a couple hundred cakes a day. They were the most popular &lt;br /&gt;item on the menu. You will find out why when you try them.&lt;br /&gt;&lt;br /&gt;Crab cake dressing&lt;br /&gt;2 eggs&lt;br /&gt;2 teaspoons salt&lt;br /&gt;1 teaspoons cayenne pepper&lt;br /&gt;1 cups finely ground onion, drained very well&lt;br /&gt;&lt;br /&gt;Use food processor to grind onion, let drain in colander for&lt;br /&gt;at least 20 minutes, do not press.&lt;br /&gt;Mix above items together with large wire whip until smooth.&lt;br /&gt;&lt;br /&gt;Crab cakes &lt;br /&gt;1 pound blue crab claw meat&lt;br /&gt;1 pound blue crab lump meat&lt;br /&gt;4 ounces cracker crumbs made from saltines&lt;br /&gt;1 1/4 cups dressing, you can add the balance of the dressing&lt;br /&gt;prepared above if a moister cake is desired.&lt;br /&gt;&lt;br /&gt;Gently mix crab meat, cracker crumbs and dressing together&lt;br /&gt;by hand just enough to fully moisten.&lt;br /&gt;&lt;br /&gt;Weigh out 4 ounce portions and hand form into round cakes &lt;br /&gt;about 3/4 to 1 inch thick. Wrap in wax paper, 6" squares &lt;br /&gt;will do, and refrigerate for 2 hours before cooking.&lt;br /&gt;&lt;br /&gt;Sauté using clarified butter till golden brown on both &lt;br /&gt;sides. (to clarify butter, heat till almost boiling, let&lt;br /&gt;set &lt;br /&gt;till it separates. Use the clear portion on top)&lt;br /&gt;&lt;br /&gt;Can be served by themselves or as a compliment to a light &lt;br /&gt;flavored fish such as grouper, scamp or tilapia.&lt;br /&gt;&lt;br /&gt;Yield: approx. 12-13 cakes.&lt;br /&gt;&lt;br /&gt;The last time I checked, blue crab claw meat was $12-$14 a &lt;br /&gt;pound and blue crab body lump meat was $18-$20 a pound. &lt;br /&gt;And you always wondered why the crab cakes at the &lt;br /&gt;restaurant seemed so small and over priced!&lt;br /&gt;&lt;br /&gt;By making these at home the costs will be about $3 each and&lt;br /&gt;like I said earlier, these are going to be better than 99% &lt;br /&gt;of the restaurants that serve them unless you live on the &lt;br /&gt;Chesapeake Bay! Mongolian Hot Pot is a great meal that can be cooked in an electric fondue pot.&lt;br /&gt;&lt;br /&gt;The Mongolian Hot Pot was originated by the ancient Mongols who would cook their food in boiling water. They would season the water with whatever dry spices they might have had on them at any given time. Those Mongols probably would not recognize your Fondue Pot with it's sterno cans and stainless forks!&lt;br /&gt;&lt;br /&gt;To make Mongolian Hot Pot you'll need to fill your fondue pot with a type of  broth. Be it beef, chicken, or even a spiced vegetable consume. Using your fondue forks you skewer meats and vegetables and cook them right at the table. You will need the more tender cuts of meat as boiled meats can be a little tough.&lt;br /&gt;&lt;br /&gt; All the of preparations such as cleaning and cutting the vegetables and meat into bite sized pieces, can be done before hand. The little morsels will of course cook quicker and not reduce the temperature of the boil if they are brought out a little early to reach room temperature before dunking.&lt;br /&gt;&lt;br /&gt;You'll need at least three dipping sauces to offer your guests some variety. possibly a hollendaise/ bernaise, a warm barbacue, and a spicy southwest would be good choices.&lt;br /&gt;&lt;br /&gt;The cooking of the items will add flavor to the broth. At the end of the meal add some rice noodles and let cook for 10 min. Dish out into small bowls and serve with chopsticks. This after dinner soup is a special treat that your guests will remember and look forward to at future dinner parties.&lt;br /&gt;&lt;br /&gt;Mongolian Hot Pot Recipe&lt;br /&gt;&lt;br /&gt;Broth:5 cups, your choice, Broth&lt;br /&gt;2 Green Onions (chopped)&lt;br /&gt;2 Garlic Cloves (minced)&lt;br /&gt;About 5 Shiitake Mushrooms (chopped)&lt;br /&gt;2 tablespoons Cilantro (chopped)&lt;br /&gt;2 tablespoons Soy Sauce&lt;br /&gt;&lt;br /&gt;Vegetable Platter:&lt;br /&gt;8 Bok Choy leaves (cut into strips)&lt;br /&gt;1 – 8 ounce Can Bamboo Shoots (drained)&lt;br /&gt;2 Green Onions (chopped)&lt;br /&gt;1 cup Broccoli Florets&lt;br /&gt;4 ounce package Rice Noodles&lt;br /&gt;&lt;br /&gt;Meat Platter:&lt;br /&gt;1 pound Beef Tenderloin (sliced into thin strips) or&lt;br /&gt;1 pound Chicken Breast (sliced into thin strips) or&lt;br /&gt; 1 1/2 pounds Shrimp (in half if large)&lt;br /&gt;&lt;br /&gt;Arrange vegetable platter before guests arrive.&lt;br /&gt;&lt;br /&gt;Bring Broth to a boil.&lt;br /&gt;Add Green Onions, Garlic, Mushrooms, Cilantro, and Soy Sauce Simmer for 15 minutes.&lt;br /&gt;Spear beef strips with fondue forks and cook in broth for 3-5 minutes.&lt;br /&gt;Spear vegetable strips and cook until tender.&lt;br /&gt;Dip cooked beef and vegetables into desired sauces.&lt;br /&gt;When all the meat has been eaten:&lt;br /&gt;Add Rice Noodles to broth.&lt;br /&gt;Add remaining vegetables to broth.&lt;br /&gt;Simmer for about 10 minutes.&lt;br /&gt;Serve portion to each guest in a bowl with chopsticks.
